The ampersand (“&”) is a small thing, almost easy to overlook, yet it exists to bring two names together without making them the same. It seems an appropriate symbol for two London stories, each with its own identity and character, meeting in a way that allows something new to emerge between them.

London’s Grand Hotel

I have always found London particularly seductive for this reason. My curiosity is easily fed by history, literature, art, writers, books, museums, music, architecture, and the city offers all of it in such abundance that even an ordinary walk can feel like an invitation to investigate something further.

My relationship with London is also more personal than intellectual; friends and family make returning especially pleasurable, while its fashion, abundance of shops and constant ability to reinvent itself provide another kind of stimulation. London rarely allows the appetite of discovery to become dormant.

Against that backdrop, The Langham feels almost inevitable. Opened on 10 June 1865, it was Europe’s first purpose-built “Grand Hotel,” conceived to transform the impression of luxury accommodation in London. Electric lighting, hydraulic lifts and air conditioning were among its early innovations, while its position soon made it a destination for royalty, artists, musicians and writers. Charles-Louis Napoléon III stayed there during his exile; Sir Henry Morton Stanley, legendary Journalist and Explorer; and Sir Arthur Conan Doyle used the hotel as a setting for several Sherlock Holmes stories.

Yet what interests me more than the famous names is what happens when history becomes part of the character of a place. A hotel that has stood for more than a century and a half, inevitably absorbs something from the people who have passed through it. And The Langham’s story is inseparable from the countless encounters, conversations and occasions that have taken place within its walls. That feels like a more compelling understanding of heritage than simply preserving objects, dates and photographs. A building becomes meaningful because people continue to inhabit it, and its character shifts subtly with every generation that enters through its doors.

The Langham has survived war, changing fashions and ideas of luxury, including the destruction of much of its West Wing during the Second World War and its later occupation by the BBC. Its subsequent restoration allowed it to retain the sense of occasion that has always distinguished the house, while Palm Court, recognized by The Langham as the birthplace of afternoon tea, remains another expression of how the hotel has shaped the language of hospitality itself.

It is into this setting that Sale e Pepe has entered its next chapter.

Sale e Pepe Mare

For more than fifty years, Sale e Pepe has been part of London’s dining landscape. Founded in 1974 by Toni Corricelli whose roots were in Puglia, the original Knightsbridge restaurant accumulated the kind of history that cannot be manufactured. Regulars, memories, relationships and a reputation built over decades rather than marketing cycles. When Markus and the Thesleff Group considered how that legacy might evolve, the intention was not simply to reproduce the original restaurant on a larger stage. The idea was to allow Sale e Pepe to move forward without losing what had made it distinctive.

Sale e Pepe Mare therefore feels like an evolution instead of a replacement, retaining the identity of Sale e Pepe while looking towards the Italian coast, particularly the Riviera, with influences extending from the Amalfi Coast towards Puglia. It is seafood-led, but not confined by seafood, with crudo, pasta, signature Milanese dishes, sharing plates and thoughtfully chosen cuts of meat sitting comfortable within the menu.

The new opening at The Langham also gives the restaurant a different relationship with London. The Knightsbridge restaurant remains the keeper of its intimate, accumulated history, while Mare has a larger and more international setting, bringing the name into a house whose own story reaches back to the invention of the Grand Hotel. Two London institutions finding a reason to move forward together.

The restaurant’s design, by Manuela Hamilford of Hamilford Design, creates an ambience that acknowledges the coastal identity without becoming literal, allowing the idea of the sea to sit beneath the expression as opposed to dominate it. There is contemporary lightness, but enough formality to feel at home within such a historic setting. The Mare (sea) gives the direction the Milanese thread reminds us that Sale e Pepe’s identity has never belonged to a single corner of Italy.

Interlude

My own connection to this story began rather more simply. Last year, whilst visiting my cousin, Lavina, in London, she suggested that my husband and I should enjoy dinner at Sale e Pepe in Knightsbridge and that it was one of her favorites. I highly value Lavina’s tasteful recommendations. We were fortunate to get a reservation, albeit a weekday, the restaurant was full when we arrived, with the energy of a place that had long since become part of its neighborhood.

Somewhere during the evening, I connected with one of the managers, and our conversation turned to the new restaurant opening at The Langham. He told me with complete confidence, that I would love it, I tucked the thought away in my notes. Word of mouth, still one of the most persuasive forms of discovery, certainly travels far. When we returned to London last week for a family wedding, we found ourselves making our way to The Langham for dinner at Mare. Although not quite according to plan. Having made the simplest of calendar errors, we discovered that our reservations were for the next day and not today, as we stood before the host desk trying to figure out what had happened. Having arrived after travelling and carrying the inevitable effects of jet lag, we were not in a particularly convincing position to argue with our own calendar.

This was one of those small moments when hospitality becomes much more revealing than any polished description of service could ever be. Instead of making the mistake feel awkward allowing it to become our problem to solve, the host and hostess both welcomed us, found a lovely table without a wait and handled the situation with such natural ease that I never felt uncomfortable about having got the date wrong. My dietary requirements were accommodated effortlessly, and for a moment, I scarcely felt they were a consideration at all.

A nod, a smile, a softly spoken “everything good?” from the servers and sommeliers punctuated the evening, never intrusively, but with an attentiveness that seemed instinctive and universal across the room. Sofiane, our main server, was absolutely delightful, with a smile so naturally contagious that it became a part of the ambience around the table.

The wine selection journeys through Italy’s diverse regions and distinguished vineyards, while a Champagne trolley brings an elegant touch of theater.

The Chassagne-Montrachet 2023 alongside Ca’del Bosco Franciacorta Cuvée Prestige, each contributed its own character and nuance.

Yet as the evening progressed, I found myself immersed in what was happening beyond the food, particularly in a conversation with Carolina Hanlon, General Manager of Sale e Pepe Mare. Carolina is warm, passionate and easy to connect with. What interested me most was the thought she brings to training. Our conversation moved beyond the mechanics of service into judgement, awareness and sympathy. Teaching our teams not simply what to do but why they are doing it, how to read a guest and how to recognize that every table carries different expectations and circumstances.

Later, I noticed Carolina working alongside her team during a busy service. It gave practical form to what she had described. Leadership in hospitality cannot exist solely in an office or training manual, it must be visible in the room, particularly when the demands are greatest. Her presence suggested that awareness was not simply a principle discussed in training, no longer theoretical, but visibly part of the restaurant’s daily practice.

Razvan Pestean, Creative Director of Thesleff Group, sits within the broader creative direction of a group interested in how established London names can evolve without losing their purpose. The Langham carries the resonance of generations of hospitality, while Sale e Pepe carries more than five decades of memories in London. Marcus Thesleff carries his own early memories of the Knightsbridge restaurant into its next expression, and Mare takes the identity of Sale e Pepe towards the sea, towards a larger room and towards a broader London audience without pretending that evolution requires erasure.

Behind the storied luxury of its timeless façade, The Langham proves that even London’s most grand institution cannot entirely escape the shadows of its own history.

When I returned to Villa Pétrusse, Luxembourg, I had the pleasure of meeting with Chef Kim de Dood once again. We first met in April, when Le Lys was still establishing its identity and the possibility of a Michelin star remained just beyond the horizon, a conversation I shared here with readers before.

A few weeks ago, I sat across from the same chef with one significant difference, the star we had spoken about so carefully was no longer an aspiration. It had become part of the story of Le Lys. We spoke then about Kim’s ambitions, his journey and his vision for the restaurant, but the outcome was still unknown.

There was, fittingly, a little suspense in the way the news itself unfolded. Michelin had been in contact with the restaurant, yet the formal invitation to the ceremony in Antwerp had not reached the team. When they contacted the Guide, Michelin, itself was equally surprised that the invitation had not arrived. It had been sent. Then, after a brief moment of uncertainty, the email finally appeared. The invitation was received, arrangements were confirmed, and the team was asked to ensure that they would be present in Antwerp.

What had seemed like an administrative mystery suddenly carried an altogether different significance. The team realized that they were not simply being invited to attend the Michelin ceremony; they were being invited to receive a star.

On 4^th May 2026, at the Belgium and Luxembourg ceremony in Antwerp, Le Lys was awarded its first Michelin star, the only new star awarded to a Luxembourg restaurant in the 2026 Guide. For a restaurant that had opened less than a year earlier, the recognition was remarkable.

For Chef Kim, it carried an added significance of achieving it in the country where his own culinary story began.

So, what does the star mean beyond recognition itself? Kim answered with characteristic simplicity: “Cherry on top of the cake. A big thank you to the team.”

It is an apt description. The cake is the years of work, the experience gathered abroad, the ideas, the kitchen, the restaurant, and the people who have built Le Lys together. The star is the celebratory finishing touch.

The collective spirit became even clearer when I asked Kim what the moment meant to his team. His answer was unexpected and rather wonderful: “Having the best car won’t win the Formula One alone. You need a good driver and a fantastic team as well. And second, friendship. We are all friends here, so we help each other and push each other towards our goal.”

Formula One evokes precision, speed, and discipline and an almost extraordinary level of collective concentration. Friendship introduces something warmer and more human. Together the two words describe the particular alchemy required in a serious kitchen, everyone must know their role, trust one another implicitly and perform at the highest level, while still sharing a bond strong enough to carry the intensity of the work.

Le Lys embodies that same dialogue between heritage and renewal.

Housed within Villa Pétrusse, the nineteenth-century residence formerly known as Villa Baldauff underwent five years of restoration before being given a new life as one of Luxembourg’s most distinctive luxury addresses. The hotel welcomed its first guests in June 2025, with Le Lys opening the following day.

Kim’s own journey mirrors that transformation. Born in Luxembourg, he spent formative years working in Asia, including Singapore and Kuala Lumpur, absorbing techniques, tastes and perspectives that would eventually become part of his own culinary language. Returning home was therefore not a retreat into familiarity, but an opportunity to reinterpret it.

When I asked him how he would describe his cuisine today, and whether it had evolved since Le Lys first opened, his answer was admirably direct: “Me on a Plate.” He describes it as “Luxembourgish with an Asian touch”, adding that there are “new ideas all the time.”

Those three words “me on a plate”, say more than any elaborate culinary manifesto could. That philosophy comes vividly into focus in the current summer menu at Le Lys, where the season is given room to speak through a succession of considered compositions.

Michelin itself recognized this synthesis, describing Kim’s cuisine as a meeting of Luxembourgish roots and Asian nuances, with notable subtlety. A gastronomic distinction transcends the debate of tradition versus innovation. It honors the deliberate tension of textures and culinary expression brought to life by an avant-garde chef de cuisine.

That tension is central to Kim’s cuisine. Tradition is not treated as something immutable, nor innovation as an end in itself. Instead, the two are allowed to meet on the plate, creating something that belongs unmistakably to Kim.

Meeting Kim with his full brigade, I was equally interested in what surrounded the food. There was a composed confidence to the team, nothing theatrical, nothing forced, simply people who understood the tempo of the room and of one another.

And that brought me back to the wider story of Villa Pétrusse, because receiving guests begins long before one reaches the table at Le Lys.

General Manager, Stéphanie Raimbault offered an elegantly judged greeting, with the assurance of someone who understands the character of the house represented. It created nostalgia, a feeling of being honoredinto a piece of Luxembourg’s history.

Room Division, Manager Camille Mauney, personalizes that same sensibility to every stage of our stay as though it was so simple, allowing the character of Villa Pétrusse to reveal itself through her own knowledge and care.

David, Head Butler, brings a ray of sunshine at every encounter, always ready with the kind of unparalleled assistance that makes a stay feel organic.

At Brasserie Ciel (sky), an especially poetic name for the conservatory where breakfast unfolds. Bathed in morning light and accompanied by birdsong, it possesses an almost ethereal quality, inviting one to linger over the first hours of the day.

André wears a smile perfectly befitting of a front-of-the- house manager, a genuine morning smile that lifts the spirit and sets the day on its way.

Then there is Momo, whose gestures are instinctive. He noticed the choices we enjoyed and contacted room service so that the same accoutrements could be made available to us throughout the day. An almost imperceptible gesture, yet one that spoke eloquently of hospitality at its most refined.

After years of developing his craft abroad, the recognition had come in his own country. The emotion of the occasion belonged to the entire brigade. Chef spoke with evident pride about the people around him, describing the achievement as a wholesome collaboration A star may ultimately be attached to the name of a restaurant, but its creation is never the work of one person. Behind the Chef is a brigade; behind the brigade is the dining room; behind the dining room is an entire house whose people, standards and spirit shape what the guest ultimately experiences.

That sense of continuity is particularly evident at Villa Pétrusse. The hotel occupies the former Villa Baldauff, a nineteenth-century residence overlooking the Pétrusse Valley that underwent five years of restoration before being given a new life. Villa Pétrusse welcomed its first guests in June 2025, with Le Lys opening the following day as its gastronomic expression.

Villa Pétrusse is a house that respects its history without becoming imprisoned by it. The architecture remains unmistakably of its time, while the experience has been given a contemporary purpose.

Luxembourg allowing them to converse with the flavors and traditions he had known from childhood.

That blend is perhaps at the heart of Chef Kim’s cooking, a respect for what has come before, coupled with the confidence to take it somewhere unexpected. It is not a question of choosing between tradition and modernity, but of allowing the two to meet in a way that feels considered.

The result is a cuisine with both memory and movement, grounded on place, yet unmistakably shaped by a chef whose perspective has been formed far beyond it. Sitting with Chef Kim and meeting his whole brigade at Le Lys, I was struck by the fact that the Michelin star seemed almost secondary to the atmosphere surrounding it. There was no sense of a young team resting upon its achievement. Instead, there was composure and confidence. The precision was evident, yet it never felt mechanical, there was genuine camaraderie.

Yet the word Kim placed beside it was friendship. For him, the achievement is not simply about operating at the highest level, it is about the relationships that make that intensity sustainable and meaningful.

It gives greater meaning to Kim’s own perspective on the Michelin star. “A star is good, but it is certainly not the most important thing.” His words are especially powerful considering he just received the most coveted distinction in gastronomy. This suggests that the star is not the destination, but a way of working, one that depends upon people, consistency, curiosity and the desire to make each experience matter.

And perhaps that is what made returning in August so rewarding. In April, I met Kim before the answer was known. In August, I met him after the recognition, and yet the essence of the man and the restaurant remained unchanged. What had altered was the light cast upon them.

In April, the star was still a question, today, it is sewn in Kim’s Chef coat.

The illustrious Avenue Montaigne evokes haute couture, jewelry, grand hotels, great mansions and fine dining. Yet, its beginnings were considerably more modest. Once a mere walking path on the outskirts of Paris, the avenue gradually grew into one of the city’s most prestigious addresses. Cultural life was enriched by the opening of the Théâtre des Champs-Élysées in 1913, while expansive residences, hotels and the arrival of couture houses transformed the avenue into a symbol of Parisian elegance.

Fittingly renamed in 1850, after Michel de Montaigne (the great Renaissance writer and philosopher whose Essais explored human nature, experience and the art of living), the avenue’s name is revered given its close association with the art de vivre.

Just as fitting, is the occupant of number 30. A design house that would give the avenue one of its most enduring chapters, Christian Dior.

30 Avenue Montaigne

Dior established his mansion here in 1946, determining to be more than a fashion house. He understood instinctively that couture was about something beyond the garment itself. The architecture, interiors, flowers, fragrance and the manner in which clients were received all contributed to the experience.

Dior worked with decorator Victor Grandpierre to create the elegant interiors of the couture salons, establishing the refined setting in which his collections would be presented.

On 12 February 1947, these rooms witnessed a moment that would change fashion forever. Dior presented his first collection, introducing silhouettes that brought a new sense of femininity after the austerity of the war years. The sculpted waist and the generous proportions of the Bar suit became emblematic 1947 haute couture collection, tailored by a young Pierre Cardin, while Carmel Snow of Harper’s Bazaar famously described the collection as a “New Look.”

The Dior name became household, as did the address. Having contributed to the creation of a visual language through his designs, the legacy of the famous fashion house was not in doubt and continues to influence fashion today.

Entering the Dior Story

La Galerie Dior, which opened to the public in 2022 within the transformed 30 Montaigne, served as a culmination of Dior’s prominence. Original garments, sketches, photographs, archival material and couture pieces trace the evolution of the maison from Dior through the designers who followed him, including Yves Saint Laurent, Marc Bohan, Gianfranco Ferré, John Galliano, Raf Simons and Maria Grazia Chiuri.

It was incredible privilege for me to tour the Gallery firsthand, during a visit to the Dior house in 2025.

There is something particularly compelling about seeing these pieces here as opposed to in a conventional museum. Of course, touring the exhibit with the fashion house itself is part of the story. The rooms, the couture, the drawings and the photographs are connected to the place where so much of Dior’s history actually unfolded.

Among the silhouettes that have become inseparable from Dior’s history, the Bar Jacket remains perhaps the most recognizable expression of the New Look, while later creations and accessories including the Lady Dior, 30 Montaigne and Dior Book Tote, each have become signatures of the modern maison.

Walking through the Gallery, one is reminded that behind every renowned silhouette are drawings, fabric, extraordinary craftsmanship and the hands of the petites mains who turn an idea into reality.

The Backbone of Haute Couture

The transformation of the historic address has been trusted to architect Peter Marino, who has brought together heritage and contemporary design on an extraordinary scale.

Today, 30 Montaigne encompasses much more than a boutique. The Living Archive- Gallery, Dior Kaleidoscope, Couture, Prêt-à-Porter, Haute Joaillerie, , Horticultural Sanctuary and Epicurean Artistry, have been brought together within one destination, creating a world in which fashion and the broader culture of luxury can coexist.

This is part of a wider change taking place across the luxury industry. The great mansions are increasingly becoming places where fashion, art, books, music, architecture and cuisine meet.

True luxury today is no longer just about the product. It is about the profound artistry that brings to life. The time bestowed, the mastery shared, the passing down of heritage, and the exclusive invitation to step inside a world of discovery, the opportunity to discover absolute perfection.

Returning to Dior

We had visited Monsieur Dior previously for lunch, before the restaurant received its Michelin star. Following that meal, chef had requested our presence to discover La Galerie Dior, allowing us to move from the contemporary world of restaurant into the extraordinary history of the mansion.

Returning this time with family felt different, yet wonderfully familiar.

Our afternoon began in the Dior boutique, where the sales team greeted us and invited us to discover the capsule collections. They gave us their time and consideration, allowing us to browse, ask questions and appreciate the mastery without feeling hurried.

It was a lovely reminder that hospitality is often found in the smallest details someone taking the time to introduce you to a new piece, sharing their acumen, recognizing what interests you and making a returning guest feel genuinely appreciated.

A Star is Born

After our time with the collections, we ventured upstairs to Monsieur Dior. This time we were there for desserts, but there was also something to celebrate.

Monsieur Dior received its first Michelin star after only seven months of opening.

An extraordinary achievement, and for us it made the return particularly enjoyable because we were able to share our before and after story with our family.

The recognition came in the 2026 Michelin Guide, celebrating the restaurant under Yannick Alléno, whose career has made him one of the most recognized figures in contemporary French gastronomy. He took charge of Monsieur Dior in September 2025, bringing considerable expertise to a restaurant conceived as another expression of the Dior universe.

The connection between Dior and Alléno is an intriguing one. Fashion gastronomy may appear to belong to different worlds, yet both depend upon imagination, precision, craftsmanship and an obsessive attention to detail.

At Monsieur Dior, the cuisine reflects that relationship, drawing inspiration from the house, its archives, silhouettes and natural motifs.

The warmth of the team as we returned to celebrate them was a lovely continuity, the star had brought recognition, but their hospitality remained personal.

Christian Dior created a house in which aesthetics was never isolated from its surroundings. Decades later, that philosophy has expanded into something much larger, a place where couture, architecture, history and culinary arts can all be accomplished within the same address.

Perhaps Dior knew instinctively that a client’s feelings upon entering his world truly mattered.

Nearly eight decades later, though luxury has evolved completely, the heart of it remains unchanged. It is about how you enfold people within the world you have created.

Saint Laurent Rive Droite is one of them. At 213 Rue Saint-Honoré, the house has created something that is a simultaneous fashion destination, a gallery, a design space, a cultural salon and, just around the corner, a restaurant. It is an intriguing creative universe that reflects how luxury is changing, and how hospitality is increasingly becoming a way of life by replacing a category reserved for hotels and restaurants.

The address itself carries with it a history and a story. In the same way that Le Bristol and Pavyllon have.

Saint Laurent Rive Droite on Rue Saint-Honoré

Rue Saint-Honoré and Rue du 29 Juillet in the 1^st arrondissement, was once home to Colette, the influential Parisian concept store, founded in 1997 by Colette Roussaux and her daughter, Sarah Andelman. For twenty years, Colette brought together fashion, art, books, music, design and food, making the “store” into something more than a shopping destination. It became a cultural meeting point and helped establish the idea that retail could be a form of discovery in itself. When Colette closed in 2017, the address was ready for another interpretation.

Saint Laurent arrived at the location in 2019, and under Anthony Vaccarello, Rive Droite has continued to develop as something considerably broader than a traditional boutique. After a year of extensive renovation, the Paris location opened in February 2025 with a new architectural vision and a renewed cultural program. The name itself is a knowing reference to Saint Laurent Rive Gauche, the pioneering ready-to-wear line introduced by Yves Saint Laurent in 1966, which helped transform designer fashion by bringing the creative energy of couture into ready-to-wear.

Yves Saint Laurent and Pierre Bergé founded the maison in Paris in 1961. Yves Saint Laurent presented his first collection the following year, and throughout his career repeatedly challenged the conventions of fashion and femininity. Rive Gauche became one of his most significant innovations, while Le Smoking, an architectural silhouette, would become a timeless expression of his belief, that women could borrow from the dress codes of menswear without surrendering their own identity. The house’s history is one of reinvention, of taking something familiar and giving it an entirely new voice.

That spirit is particularly visible at Saint Laurent Rive Droit today!

Shopping at YSL

This is where my own visit became particularly personal. I came to find a gift for my husband, expecting nothing more than a casual afternoon of shopping. Upon entering, one of the managers noticed that I was wearing, quite coincidentally, a couple of Saint Laurent pieces. There was a genuine pleasure in his reaction, because, as I learned, the matching necklace and bracelet were limited editions. It seemed to matter that these were not simply things purchased from the “house,” but pieces that had acquired a history of their own.

The manager then called upon Dorian Peccatier, a young member of his sales team, to assist us. In Dorian, we found someone who was genuinely intent on making our visit an enjoyable experience. Patient, knowledgeable and engaging, he guided us with an easy confidence, answering our questions without ever making us feel hurried.

Our conversation had moved beyond the practicalities of shopping, touching on Paris and other subjects that make a visit memorable. There was generosity in his manner that felt entirely natural, as though taking the time to listen and to help were simply part of the house’s way of welcoming its guests.

The moment was celebrated with Champagne. A gracious exchange between the house and someone who had formed her own memories round it!

Perhaps that is what Saint Laurent understands particularly well, the creation of a world, not simply the presentation of a product.

Sushi Park Paris

Beneath the world of fashion and design, another chapter appears.

At 8 Rue du 29 Juillet, beneath the Saint Laurent universe, conveniently situated, is Sushi Park Paris, the first permanent Sushi Park outside Los Angeles. Chef Peter Park’s original Sushi Park opened in Los Angeles in 2006 and became known for its intimate omakase (chef’s choice) and uncompromising approach to seasonal fish and seafood. Saint Laurent’s relationship with the restaurant began in Paris during Fashion Week in 2022, when the two collaborated on a temporary culinary presentation. In 2025, that relationship evolved into a permanent Paris location.

The placement is fascinating. A French fashion house upstairs; an intimate Japanese sushi counter close within. Los Angeles meeting Paris through Japanese culinary tradition. It might sound like an unlikely combination, yet the philosophies have more in common than one might initially imagine.

Peter Park’s changes according to the day’s arrivals, with the menu created around the freshest seasonal raw fish and seafood. There is no elaborate catalogue from which the guest must construct a meal, instead, the chef determines the progression according to what is at its best. The approach is of course admirably precise, allowing the quality of the ingredients to remain at the center.

The same restraint can be felt in the relationship between the restaurant and the fashion house. Anthony Vaccarello’s Saint Laurent is known for its chiseled silhouettes and strong visual language, whilst Peter Park’s cooking relies upon precision, seasonality and the confidence to let excellent ingredients speak for themselves. Both are, in their own ways, exercises in editing.

The dining room also continues the conversation with design. The reopened Rive Droite incorporates furniture collaborations, including work with Donald Judd Furniture, while the wider Saint Laurent programme brings together art, design, music, books, films and fashion. The result is not a collection of unrelated attractions but a carefully considered environment in which one discipline leads naturally into another.

Sadly, our timing did not allow us to taste Sushi Park. The kitchen is closed on Sundays & Mondays. We will have to wait for another journey. I would rather have that part unwritten than describe a meal I did not have.

However our gracious host, Elina, from its PR team, together with Dorian, the ultimate architects of Parisian charm and couture, graciously took us through the restaurant and kitchen giving us a glimpse behind the scenes. Management turned the empty restaurant into an incredibly personal, exclusive viewing. Stepping into Director Anthony Vaccarello’s aesthetic vision, a sleek, industrial-chic space of dark wood, waxed concrete, custom dark ceramics, wait to hold Chef Peter Park’s legendary culinary vision, only built the anticipation.

Yet perhaps that makes the discovery even more interesting. We came for fashion and found a much larger conversation about the way contemporary houses are redefining what a destination can be.

When Hospitality Becomes a Lifestyle

I had seen a similar idea taking shape at RH Gallery in the Bay Area, where furniture, architecture, gardens and dining are conceived as parts of an immersive environment.

In Paris, Saint Laurent approaches the same broader movement through its own language bringing fashion together with art, design, food and culture. This is more than a retail trend. They have created a living concept, inviting us into a sensibility, a point of view and a way of living.

When fashion becomes a gallery, a gallery becomes a cultural place, a design collection becomes part of the environment, and a sushi counter becomes part of the same creative story. This particular address in Paris is already writing its next chapter.

Situated on Avenue Dutuit, tucked beside Avenue Gabriel within the Carré des Champs-Élysées and Avenue Edward Tuck (named after the venerable American philanthropist who contributed to the building of Le Petite Palais), Le Pavillon Ledoyen occupies one of the most beautiful and discreet settings in Paris.

Framed by palatial gardens and only moments from the Élysée Palace, this refined corner of the city has witnessed more than two centuries of French history. It is a place where diplomacy, art, literature and gastronomy have long existed side by side.

The story begins in 1779, when the original establishment opened as a modest inn welcoming visitors strolling through Champs-Élysées. At the time, this was still the edge of Paris. Open countryside surrounded the property, and travelers stopped here before returning to the city.

Everything changed in the nineteenth century. Architect Jacques Hittorff transformed the Champs-Élysées into the stately public gardens admired today, designing the statuesque pavilion that still houses Ledoyen. His vision complemented the sweeping transformation of Paris led by Baron Georges-Eugène Haussmann, whose grand boulevards and harmonious architecture reshaped the French capital into one of the world’s most admired cities.

Yet it is the people who have passed through these doors that give Pavillon Ledoyen its extraordinary place in history

Legend tells us that Napoléon Bonaparte first met Joséphine de Beauharnais here before their marriage, forever linking the restaurant with one of history’s most celebrated romances.

As Paris entered the Belle Époque (the beautiful era), the dining rooms received leading pioneers of French Impression in art and the Naturalist and Realist movements in literature. Claude Monet, Edgar Degas, Émile Zola, Gustave Flaubert and Guy de Maupassant, to name a few. Not just contemporaries, but active partners in the same cultural ecosystem. Yet his story began much closer to home, in his parents’ Parisian bistro, where he first learned that hospitality transcended well beyond the plate. Alléno watched conversations transpire across the counter; friendships manifest between strangers and regular guests greeted like family. Those encounters shaped a philosophy that continues to define every restaurant carrying his name.

Throughout a career spanning more than three decades, Alléno has become one of the defining voices of modern French gastronomy. Guests gather around an open counter inspired by the convivial atmosphere of his childhood bistro, where culinarians, oenologists and patrons share the same space. Every finishing touch becomes part of the immersion. Every conversation amplifies the evening. Every patron becomes part of the story.

As Chef Alléno often reminds us: “Today’s cuisine must evolve.”

That vision now extends well beyond Paris. Pavyllon has secured illustrious enclaves across the globe, each integrating its local surroundings, while remaining inextricably linked to the philosophy first imagined, beneath the historic roof of Pavillon Ledoyen.

Few places embody those words more completely than Pavyllon.

Our tasting menu allowing for dietary needs was orchestrated with precision.

~ Artichauts Émincés Envolée Folle de Salade aux Fleurs de Courgette et Parmesan :

Gossamer of raw artichokes offer a subtle nuttiness, crowning the dish alongside shrouds of rich aged Parmesan. Delicate zucchini blossoms introduce a hint of honeyed sweetness, while a verdant arugula pesto accentuates a peppery, baseline on the finish.

~ Risotto Verde Au Parmesan: Deeply herbaceous, creamy, punctuated by crisp minestrone grains. Perfectly bound arborio meets a vibrant emerald herb reduction.

~ Serving as the ultimate elevator, the Puligny Montrachet Le Trézin 2023: Brings an opulent texture and high-altitude mineral precision that harmonize with the velvety depth of the risotto, whilst its structural acidity acts as a luminous foil to the delicate, nutty gossamer of raw artichokes.

~ Sgroppino Limoncello: The sweet finale, a refined modern take on the Italian Sgroppino, like a bright and airy lemon cloud, provided a spirited finale. Glacé limoncello, mascarpone, Champagne and lemon sorbet combined in a creamy composition. Served in an art deco coupe to marry completely with the Champagne.

It recalled a glamorous bygone era of traditional European nightlife. A perfect closing note, leaving the palate refreshed and ready for conversations long after the final course.

Wine forms an equally important chapter of that philosophy. Alléno and his sommeliers rejoice both historic domains and independent growers whose wines express authenticity, place and character. Every pairing is selected to complement the cuisine with precision while encouraging discovery, allowing guests to experience familiar appellations alongside emerging producers whose work reflects the continuing evolution of French winemaking.

Our return to Pavyllon Paris carried a personal connection of its own. Over our last two visits, we had become familiar with the team and warmth of their welcome, so meeting a new brigade this time was felt like seeing the establishment enter a fresh chapter. Meeting the new Paris team and seeing how naturally they have taken forward Alléno’s vision made the evening feel like a continuation rather than a departure.

Leaving Pavillon Ledoyen, one thought remained. Some places preserve history behind the glass, while others allow it to breathe. Le Pavillon Ledoyen breathes life into one of the liveliest cities in the world.

For almost two hundred and fifty years, this singular address has welcomed those who shaped France’s political, artistic and culinary identity. Today, Chef Yannick Alléno ensures that story continues by embracing thoughtful evolution while honoring everything that came before.

Stepping back into the Parisian evening, we knew one thing with certainty. This city is far from finished with us. Our story continues.

My journey begins on rue du Faubourg Saint-Honoré, one of the most celebrated avenues in French capital. This was no accidental stop on my itinerary. I came to Paris with purpose, to celebrate the centennial of Le Bristol Paris, one of France’s most distinguished palace hotels, marking 100 years of timeless elegance since opening its doors in 1925. And, to reconnect with Chef Arnaud Faye, whose culinary work I first encountered in the medieval village of Éze.

Rue du Faubourg Saint-Honoré

Long before Rue du Faubourg Saint-Honoré became synonymous with haute couture, diplomacy, and refined living, it was simply a road beyond the medieval walls of Paris. The word literally means “outside the city,” reflecting its origins as a rural path lined with vegetable gardens and modest homes. As Paris expanded during the seventeenth and eighteenth centuries, the area attracted aristocrats and influential financiers, who built magnificent private residences that transformed the neighborhood into one of the city’s most prestigious quarters.

Today, that remarkable history lives on. The avenue is home to the historic Hermès flagship, internationally acclaimed art galleries, luxury maisons, elegant embassies, and the Élysée Palace, official residence of the President of France. Walking these storied streets is to witness centuries of Parisian history unfolding alongside modern-day artistry and culture.

Le Bristol Paris

At number 112 rue de Faubourg Saint-Honoré, stands Le Bristol Paris. Part of the inimitable Oetker Hotels, Le Bristol is an institution that has imperceptibly defined the French art de vivre for a century.

Whist trends have come and gone, Le Bristol has remained steadfast in its commitment to hospitality excellence, preserving traditions while continually evolving with the times. Celebrating its centennial is not simply about commemorating a milestone, it is about honoring one hundred years of welcoming the world with grace, impeccable service, and an unwavering dedication to creating unforgettable moments.

For me, however, the celebration carried a deeply personal dimension.

Earlier in my travels through France, we spent an unforgettable week at Château de la Chèvre d’Or in the enchanting hilltop village of Èze, overlooking the Mediterranean. It was there that I first met Chef Faye where he held the title of Executive Chef.

As a hospitality ambassador, I had the pleasure of presenting him with a copy of my book, Seva, The Art of Hospitality. A tribute penned during the Covid pandemic to the exemplary people whose magnanimity and warmth define hospitality around the world.

As we walked around the kitchen and the grounds, Chef Faye asked if my next project might be a cookbook. I laughed and replied, “Perhaps. Would you like to contribute a recipe?” Without hesitation, he agreed.

Knowing that I am vegetarian, he immediately suggested one of his signature carrot interpretations. It was a simple, genuine exchange, yet one that reflected the generosity and warmth that so often distinguish truly great chefs.

Chef’s love and respect for soil and sustainability is inherited from time in his grandfather’s garden, a childhood haven that inspires his direct cooking. His muse is the humble carrot showcased in myriad ways: as intense purées, deeply caramelized sweet layers, and even atop pizzas.

Today, under the guidance of Executive Chef Arnaud Faye, honored as a Meilleur Ouvrier de France (Best Craftsman of France), that beautiful carrot creation continues its journey on the menu at Epicure, Le Bristol’s celebrated three-Michelin-starred restaurant.

A Legacy Rooted in Stewardship

Beyond its century of elegance, Le Bristol Paris demonstrates that true luxury is equally defined by responsibility. Beneath its timeless façade lies a profound commitment to environmental stewardship, where heritage and sustainability coexist in thoughtful harmony.

In the heart of the palace is its 670 Bristoliens, the dedicated men and women whose collective expertise embodies generations of exceptional savoir-faire. Each brings an invaluable métier, preserving traditions of excellence while embracing innovation with purpose.

The first Parisian palace hotel to be awarded the prestigious Green Key certification. A recognition of its long-standing commitment to sustainable practices and responsible hospitality.

The French Garden

The enchanting Le Jardin Français is far more than a meticulously landscaped retreat. Conceived as a living seasonal ecosystem, nurturing biodiversity throughout the year, the garden offers a tranquil haven for pollinators and native plant life in the heart of French capital.

High above the city, carefully tended rooftop beehives produce exceptional artisanal honey, a reflection of the palace’s dedication to supporting urban biodiversity while celebrating the natural flows of the seasons.

After a century, Le Bristol continues to prove that true legacy is not measured solely by history, but by the responsibility with which it shapes the future.

When I learned that Chef Faye had accepted the role of Executive Chef, leading a brigade of 200 strong including 100 chefs, I knew I wanted to celebrate both his exciting new chapter and the hotel’s historic centennial. The timing could not have been more perfect.

Under an impossibly blue Parisian sky, my family and I gathered for lunch in Café Antonia- Le Jardin Français, a magnificent 1,200-square-metre courtyard garden.

Hidden behind the grandeur of Rue du Faubourg Saint-Honoré, the garden feels like a secret sanctuary, where blooming flowers, manicured hedges, an elegant stone architecture create a peaceful retreat from the city’s vibrant energy.

A Place for Lingering

As we lingered over the menu, placed our orders, and captured the beauty of our surroundings, an unexpected thought surfaced. The photographs I created during my previous visit, in August of 2021, later became the visual inspiration for my writing and have remained with me ever since. I have never felt the need to replace them.

Returning now, I understood why I had never considered replacing them. Some places possess an enduring identity that transcends fashion and the passage of time. They leave an impression to remain long after we have departed.

Lunch at Café Antonia Le Jardin Français is an invitation to experience an uncompromising celebratory meal. A direct nod to the landscape, celebration of adeptness and finesse. The menu unfolds through an inspired selection of vibrant salads, pure earth driven unadulterated flavors. Delicate appetizers, phenomenal signature dishes and supreme desserts tailored with fastidious precision to detail.

Paired with flawless pacing, a masterfully culled Champagne anthology and an invitation to explore their exhaustive global wine anthology. Every element comes together to create an unforgettable expression of French art de vire (the art of living well).

Reconnecting with Chef Faye made the afternoon feel wonderfully complete. Our surroundings may have changed from the breathtaking cliffs of Èze to a hidden garden in the heart of Paris, but his philosophy remained unmistakably the same. Respect for exceptional ingredients, refined technique, and heartfelt generosity.

Equally memorable was the warmth of the hospitality brigade, whose professionalism and attentiveness embodied the very spirit that has defined Le Bristol for a century. We even fell into conversation with guests at another table.

Le Bristol was made for surprise encounters! After all, every street in Paris has a story to tell. This was one we will always share.

To understand the genius of hospitality model, one must look at the journey before the arrival. In traditional retail and dining, barriers are eliminated. RH upends this rule. To get a glass of Champagne or a bite of lunch, guests must first run a three-story gauntlet of exquisitely appointed residential galleries.

This is the visionary plan of Gary Friedman, RH’s Chairman and CEO, who recognized that modern retail could no longer survive purely online. To bring this brick-and- mortar revolution to life from the ground up, Friedman partnered with the globally acclaimed design firm NORR Architects. Together, they built a transparent, parchment-cream Venetian plaster monument anchored by a massive 25-foot threshold of retractable glass-and-steel doors.

Instead of creating a detached furniture showroom with a restaurant tacked onto the roof, Friedman and NORR orchestrated an architectural pilgrimage. Guests ascend via a grand, champagne-toned double floating staircase. As you climb past the cascading Italian limestone water walls, inspired by New York City’s iconic Paley Park, the ambient noise of the shopping center fades.

By forcing guests to slow down and wander through room-sized luxury exhibits, RH turns retail foot traffic into a deep-dwell lifestyle expression. The restaurant becomes the emotional payoff of the journey.

The Glass Conservatory, Simulating the European High Life

Upon reaching the third floor, the transition from monumental proportions gallery to hospitality space is harmoniously composed and breathtaking. Guests step into a soaring glass and steel conservatory dome designed to blur the lines between indoor comfort and outdoor majesty. Meticulous symmetry, monumental proportions, and warm Biancone limestone surfaces evoke the timeless elegance of historic European estates. Yet, the environment remains distinctly Californian.

On a glowing Sunday afternoon, the restaurant operates at complete capacity. Heritage, 100-year-old olive trees stretch toward the glass ceiling, shimmering crystal chandeliers cast a soft glow against the sunlight, and a sculptural limestone fountain provides a soothing acoustic backdrop. Beyond the landscaped garden terraces, the views sweep dynamically across the Peninsula toward the Santa Cruz Mountains.

The atmosphere feels expansive yet intimate. This environment subtly triggers status, while remaining approachable. In a region that prides itself on looking toward a virtual future, RH offers an analog sanctuary rooted in permanence.

The Curated Canvas-Contextual Furniture and Art Design

The furniture and art on display are not mere decorations; they are a clever masterclass in contextual commerce. RH strips away the transactional coldness of a traditional showroom by placing its high-end collections, characterized by cloud-like linen sofas, monolithic travertine tables, and minimalist Belgian design aesthetics, into a living, breathing social ecosystem. Giant, textured abstract canvases and brutalist iron sculptures line the perimeters, curated to mimic the private collection of an international art collector.

The cleverness of this design lies in its tactile utility. Visitors are not forbidden from touching the exhibits; they are actively encouraged to relax into them. Diners sit directly on RH’s Outdoor collections, resting their arms in refined metal frames, deep upholstered seating, and rich teak accents.

By allowing patrons to connect with the furniture in a state of unhurried, wine-filled relaxation, RH removes the psychological barrier of buying. The furniture ceases to be a retail product and becomes a coveted memory of a perfect Sunday afternoon, prompting guests to replicate the entire aesthetic in their own homes.

The Culinary Counterpoint: High-End Comfort in a High-Design World

While the atmosphere alludes elite fine dining, the culinary program employs a clever strategy. Rather than trend-driven gastronomy, RH Hospitality focuses on flawless consistency, and timeless appeal.

The menu is an elevated homage to contemporary American comfort food, tailored to a sophisticated palate by taste makers. On a bustling weekend, tables are filled with pristine plates of Crispy Artichokes, Whole Frilled Branzino, Steak Frites, Truffle Fries, Shaved Rib Eye French Dip, and the Lobster Roll can be upgrade with Petrossian Caviar, Jumbo Lump Crab Cake and the classic Butterscotch Brûlée

This juxtaposition is international menu engineering. The approachable, recognizable dishes demystify the ultra-luxury surroundings. It democratizes the occasion, making a multi-million-dollar architectural setting feel as welcoming as a neighborhood bistro. Paired with a meticulously edited beverage program featuring prestigious international Champagnes and Napa Valley labels, the hospitality encourages guests to linger, talk, and disconnect from the digital world.

A New Era of Luxury World-Building

Ultimately, RH Rooftop Restaurant Palo Alto succeeds because it recognizes that the future of hospitality belongs to the world-builders. In a digital-first era where convenience is automated, physical luxury must offer something irreplaceable, a sense of presence.

By cohesively dissolving the boundaries between high art, architectural grandeur, panoramic mountain views, and intuitive service, the architects have created the ultimate experiential ecosystem.

RH stands as a brilliant blueprint for the industry, proving that when an architecture elevates cuisine, and design fosters human connection, a retail space can transform into a timeless cultural sanctuary.

The Village Bakery in Woodside has grown into one of those rare establishments.

What began as a neighborhood bakery has developed into an all-day destination for thoughtful dining, artisan baking, an expanding wine program and a team whose dedication is evident from the moment you arrive.

It Takes a Village

Behind every successful restaurant stands an exceptional group of people. Bakers arrive before sunrise, chefs prepare each ingredient with precision, servers anticipate needs before they are spoken, bartenders introduce unfamiliar wines with confidence, managers guide the culture of the house, and countless others work behind the scenes to ensure every service evolves with care.

At Village Bakery, that collective commitment is immediately apparent. There is a natural camaraderie among the team, creating an atmosphere that feels welcoming without pretense. The genuine pleasure they take in looking after each guest is perhaps the restaurant’s greatest strength.

The focal point of the venue is its magnificent bar, that seamlessly marries mid-century elegance with a timeless European aesthetic to cultivate an atmosphere of sophisticated nostalgia.

Whilst the dining room offers an intimate sanctuary of curated vintage artwork and rich leather banquettes, the espresso bar evokes a classic mid-century salon with its pristine subway tiling and stark wooden accents. It stands as a triumph of refined, texturally nuanced design, effortlessly elevating the entire establishment into a distinguished neighborhood institution.

During both of my visits this trip, the chef graciously accommodates my dietary requirements without hesitation. Rather than viewing a special request as a limitation, it became an opportunity to prepare something equally thoughtful and beautifully presented.

That willingness to listen speaks volumes about the standards upheld throughout the restaurant.What arrived at the table illustrated the kitchen’s commitment to seasonal cooking.

~ Beginning with gluten-free cornbread muffins accompanied by whipped honey-butter, comforting in their simplicity and expertly curated.

~ Alongside, our lunch featured crisp gem lettuce paired with tender patty pan squash, celebrating the freshness and natural sweetness of the season.

~ A vibrant bowl of spinach, artichokes, Niçoise olives, picked red onions, Ricotta Salata, crispy chickpeas and Old Bay spiced prawns, finished with a lively Zinfandel vinaigrette. Every ingredient retained its own character, resulting in an artisanal offering of balance that was deeply satisfying.

A Growing Culture of Wine Appreciation

One of Village Balery’s most distinctive evolutions has been its growing culture of wine appreciation.

The restaurant has embraced a more thoughtful and approachable way of exploring wine, introducing guests to a broader range of producers, styles, and philosophies. Natural wines have become an important part of this conversation, offering an opportunity to discover bottles shaped by minimal intervention, careful farming practices, and the individual expression of the vineyard and winemaker.

During the previous visit to Village Bakery, we had the pleasure of meeting Chef Francisco Yama, who kindly invited us to taste a special pizza he had prepared for that evening’s vendor wine tasting event. Baked in the restaurant’s stone oven, the pizza featured delicate squash blossoms and ricotta, creating a beautiful connection between the kitchen’s ingredient-led cooking and the wines being presented that evening.

Through purposeful partnerships with low-intervention and biodynamic suppliers, the restaurant is bridging the gap between conscious farming and elite hospitality to cultivate a deeply connected community of wine lovers.

This awareness extends directly from glass into the kitchen, unlocking a new realm of culinary potential when cooking with natural wine.

Its commitment to people extends well beyond its own dining room. This summer, the restaurant is once again supporting the V Foundation for Cancer Research through its annual fundraising imitative.

By aligning hospitality with philanthropy, Village Bakery demonstrates that restaurants can play a valuable role in strengthening the communities they serve, reminding us that generosity is expressed not only through service but also through action.

Village Bakery succeeds because it understands a simple truth. Outstanding restaurants are not sustained by beautiful interiors or carefully written menus alone. They are sustained by people who care deeply about their craft, who welcome every guest with sincerity, who embrace harvest-led ingredients with respect, who continue learning, and who find ways to give back beyond their own walls.

How has hospitality shaped and contributed to the freedoms enjoyed in the United States?

Every nation has defining moments in its history, but perhaps its greatest contribution is the footprint it leaves for generations that follow; not simply the legacy of a nation, but the way ideas contribute to its development.

Freedom has encouraged enterprise, education, innovation, travel and the exchange of cultures. It has inspired generations to build businesses, create communities, welcome strangers and transform simple acts of hospitality into professions that continue to connect the world.

Hospitality has always existed. Long before it became an industry, it was an ultimate expression of generosity.

In many cultures, including my own, this philosophy has deep roots. In India, Seva represents selfless service offered with humility, compassion and respect. It asks for nothing in return. It reminds us that true hospitality begins not with buildings or brands, but with people.

As America expanded westward, its growing railroad network transformed the way people travelled. Communities became connected. Journeys that once took weeks became possible in days.

Hotels emerged not merely as places to rest, but as places where travelers found comfort, conversation and reassurance whilst far away from home. Restaurants became places where culture met across a shared table, and hospitality evolved alongside the nation’s remarkable growth.

Among those whose intellectual lineage continues to influence modern hospitality was Conrad Hilton. His unwavering vision “fill the earth with light and warmth of hospitality” became far more than a guiding principle for one company. It established a philosophy that continues to inspire hospitality professionals around the world.

Whether visiting Filoli Gardens, experiencing the gracious hospitality of Village Pub in Woodside or observing the thoughtful professionalism at Rosewood Sandhill, each place expressed the same truth in its own distinctive way. Architecture may inspire admiration, but people create legacy!

Perhaps that is why hospitality remains one of the world’s greatest ambassadors. Every hotel, restaurant, railway, and gathering place represents far more than its physical purpose. As the United States of America celebrates its Independence, I am reminded that the values of freedom and Seva are not as different as they first appear. One celebrates the liberty to dream, build and explore. The other reminds us that our greatest achievements are measured by how we serve others along the way.

Perhaps that is the true meaning of legacy. It is not measured by the size of an organization, the beauty of a building or the success of a destination. Legacy lives in the values long after the ink has dried.

Filoli was commissioned between 1915 and 1917 by William Bowers Bourn, II, a San Francisco businessman whose fortune stemmed from mining and the Spring Valley Water Company. The stately manor was designed by architect Willis Polk in the refined Georgian Revival style.

Since opening to the public in 1975, under the stewardship of the National Trust for Historic Preservation, Filoli has welcomed generations of visitors seeking beauty, history and mindfulness. Yet, what makes this property remarkable is not simply its history, but the way it embraces every visitor with warmth, curiosity and a sincere sense of belonging.

Set within 654 acres of orchards, and formal terraces, the architectural elegance is exquisitely softened by Northern California’s golden light. The estate is illuminated from morning through late afternoon as the surrounding gardens balance formal symmetry with the openness of the wider landscape.

Every turn reveals another delightful surprise such as sun dials, birds, rocks and trees. Filoli allows curiosity to lead the way, and we followed the boys as they followed their curiosity.

Wonder Through A Child’s Eyes

Our family discovered that Filoli’s greatest strength lies in its ability to delight every generation.

One of the highlights of the day for our boys was undoubtedly discovering the enchanting Troll House. Eagerly climbing through its timber structure, they disappeared into a world of imagination, laughter echoing through the woodland while the adults smiled nearby.

I could not help but surrender to their joyful persuasion and infectious excitement. Climbing to the top of the Troll House alongside the boys, looking out of the narrow “window,” I was reminded that sharing in their delight became one of those unexpected moments that now live among our treasured family memories.

Moments later inside the sublime residence, every room revealed another chapter of Filoli’s story. The Butler’s pantry, original kitchen, splendid staff quarters, resplendent ballroom with a monumental fireplace with marble finishes, a grand piano, a walk-in safe with beautiful silverware meticulously lined up on shelves. We found ourselves admiring elegant interiors, art, centuries-old craftsmanship.

That effortless transition between playful adventure and appreciation is something very few destinations achieve successfully. These timeless elegant, preserved spaces for ageless allure, is what hospitality has always extended far beyond nurturing guests. This time-honored archive has been supported by scrupulous planning and methodical preparations.

Filoli seamlessly blends rich history with family recreation, letting visitors forge their own personal connection to the estate.

Back outdoors, the boy’s curiosity soon led them to a magnificent climbing tree, where they happily welcomed another young visitor into their adventure. Within moments they were exploring together as though they had been best friends for years.

While the children climbed, laughed and shared stories, his mother and I struck up a conversation of our own. What began as a simple greeting quickly became a genuine connection, and before long we were exchanging contact details, grateful that a family day at Filoli had introduced two families who might otherwise have remained strangers.

Simple Pleasures, Beautifully Delivered

No memorable day is complete without good food, and The Quail Café complements the state beautifully.

Operated by the Epicurean Group, the café offers the wider visit with fresh, seasonal dishes served in an informal setting overlooking the gardens. The menu celebrates quality ingredients prepared thoughtfully, offering guests a relaxed moment to soak in before continuing their afternoon.

The Luxury We Often Forget

Resting on a bench outside the house was a mobile phone that had clearly been left behind. Without hesitation, the boys decided they wanted to find its owner. Asking Siri for the owner’s name, located his wife’s contact details and placed the call.

Moments later, a gentleman emerged from the very house we had just been exploring. Relieved and smiling, he explained that his young son had accidentally left the phone behind while they were visiting. His sincere gratitude was unmistakable, and the boys quietly accepted his thanks with enormous pride.

As their grandmother, I could not have been prouder.

There was an extra spring in their steps as we continued our walk through the rose gardens past the lily ponds and along woodland trails beneath the warm sunshine.

Those moments remind me that hospitality is far more than beautiful surroundings. It is about creating opportunities for kindness, curiosity and genuine human connection.

Filoli succeeds because it offers far more than a beautiful historic property. It invites visitors to become part of its continuing story, leaving with a renewed appreciation for nature, heritage and time shared with those who matter most.

As I reflected on our visit, watching our family enjoying the same destination in different ways, one thought remained with me.

Driving north along the Silverado Trail, the valley reveals itself gradually. Vineyard rows trace the contours of the land, olive groves appear unexpectedly between estates, and orchards carrying white peaches, Blenheim apricots, and early nectarines signal the arrival of summer.

To the west, the Mayacamas Mountains rise above the vines; to the east, the Vaca Range frames the valley floor. The journey itself becomes part of the perception.

What is striking is not a single view, but the continuity of landscape, how cultivated land and wild structure exist in the same visual language. Everything feels in conversation.

It is only later, after time spent moving through the valley, that a different understanding begins to form, that what is seen outside the window is shaping what appears on the plate and in the glass.

At Farmstead at Long Meadow Ranch, the connection to land is direct, with ingredients drawn from estate farming and nearby growers, allowing the menu to shift as the fields change.

At Lucy Restaurant & Bar, seasonal produce is expressed with lightness and moderation, where composition is guided by freshness not richness.

Taken together, these are beautiful expressions of proximity.

Ahh, the Produce!

Early summer in Napa best represents itself in its amazing produce.

Heirloom tomatoes arrive first, often still carrying the warmth of the sun. They are served in their simplest form, sliced and dressed with olive oil, basil, salt, nothing else is added that does not already belong. Their flavor is immediate, shaped by ripeness and timing.

Stone fruit follows closely behind. White peaches, apricots, and nectarines appear in combinations that rely on balance rather than construction, often paired with herbs or soft acidity. The effect is not complexity, but precision, fruit allowed to remain fruit.

Elsewhere, fire becomes the primary instrument of transformation. Carrots, beets, squash, and mushrooms are wood-fired in an open hearth, until their natural sugars deepen. Occasionally, they are finished with reductions that carry faint traces of the vineyard itself. Grape must, wine vinegar, or herb infusions that tie the kitchen back to soil with intention to the mechanism.

Blackcurrant, blackberry, cedar, and dried herbs unfold, slowly supported by tannins that frame not overwhelm. Beneath the fruit lies something more elemental. Sun-warmed soil, dry grasses, and the dense stillness of vineyard terrain at the end of a long season.

For a sublime summer finale, pair a White Peach and Lemon Verbena Tart with Illumination by Quintessa. Crafted as a certified biodynamic wine, this elegant white blend mirrors the bright stone fruit aromatics, while its rich texture and crisp acidity offer flawless summer palate cleanser.

There is an exquisite, theatrical drama to the dining room. Of all their rituals, the one that captivated me for years is the sight of the staff preparing the tables; glide-ironing the fine linens with their cordless steam irons directly on the mapped tables to erase every soft crease before the next guest ever sits down.

Witnessing this timeless dedication to perfection still alive and well today, I couldn’t help but applaud. It is a rare, magnificent display of craft. A level of table theatre I had previously only seen in three specific hotel restaurants across Paris.

The Wine Program

Village Pub’s wine program deserves recognition in its own right.

Whilst the cellar spans many regions, the emphasis on French wines is particularly compelling. Burgundy remains a cornerstone of the collection, offering guest an opportunity to explore both celebrated producers and lesser-known discoveries.

It was reassuring to see the familiar face of Master Sommelier, Jim Rollston. His long association with the Village Pub and deep knowledge of the great wine regions of France immediately conveyed a sense of confidence.

In the sommelier’s custody, the wine selections bypassed standard pairings, emerging instead as the articulate continuation of a dialogue cultivated over years!

The Grace of the Floor

Our experience was elevated entirely by our server, Tristen, with an impressive depth of food and wine knowledge, not to mention a balanced and pleasant demeanor.

Preferring an evening free of fuss, I was deeply grateful for how deftly Tristen remembered my dietary restrictions. Translating them to the kitchen with flawless precision, the fluidity ensured the chef curated a beautiful dish.

A Return Gifted with Perspective

There is value in returning to paces that already shape expectation. Village Pub does not rely on nostalgia. It continues with uncompromising vision, supported by a kitchen that understands its ingredients, a service team that understands its guests, and a structure that values consistency over reinvention.

Seeing familiar faces, recognizing long-standing elements of the menu, and experiencing the same attention to detail reinforced the sense of continuity. Even the linen ritual between seatings contributes to an identity that remains intact over time.

We left already thinking of the next visit particularly weekend brunch on the terrace, where setting and season create a different expression of the same philosophy.

Moving through the lobby and later into Madera Restaurant, I found myself soaking in once again the familiar rich wood finishes, vaulted ceilings, carefully selected artwork, natural stone, and abundant light reflect a distinctly Northern Californian sensibility. Nothing feels imposed upon the landscape; rather the interiors appear to draw inspiration directly from it.

Even the restaurant’s name Madera, serves as a subtle reminder of the role wood plays throughout the experience. Designed with an appreciation for natural materials and a strong connection to its surroundings, the spaces possess a warmth that feels perennial. The result is an environment that continues to age gracefully, inviting guests to return and discover something new each time.

Predictive Intuition and Liquid Artistry

That spirit was carried forward by Tomas, our attentive server, whose performance combined flawless professionalism with an understated, predictive intuition. He guided the evening with confidence, curating an unbroken journey from arrival through departure. The highest caliber of hospitality relies on a rare capacity to perceive a guest’s underlying state of mind, honoring their individuality rather than treating them merely as patrons at a table.

Tomas demonstrated this instinctively, showcasing a deep cultural fluency that effortlessly decodes the unspoken expectations of global travelers. His approach reflected the gold standard of modern service rules, being entirely attentive and hyper-predictive, yet completely unobtrusive, the very definition of subtle hospitality.

An equally memorable contribution came from Madera’s Sommelier, Sean, whose stewardship of the extensive wine program enriched every stage of the meal. Sean’s recommendations reflected both profound knowledge and curiosity, encouraging exploration while remaining sharply attentive to personal preferences.

Great wine service transforms a dinner into an expansive conversation, connecting vineyard, producer, guest and cuisine through shared discovery. The collection mirrors a belief that vintage should not simply accompany a meal but elevate it, showcasing sustainability minded California estates alongside small-production, biodynamic heritage growers from the world’s most celebrated regions.

One dish captured this philosophy beautifully. Handmade Pappardelle prepared with earthy, wild-forged mushrooms and crisp spring asparagus. The pasta delivered comfort and substance, whilst the vegetables contributed freshness, depth, and character.

Nothing felt excessive, each component had a distinct purpose, allowing natural, honest flavors to emerge confidently without performative flair. This deep respect for ingredient integrity runs throughout the menu, honoring local purveyors while presenting guests with dishes that feel both contemporary and timeless.

The property’s sophisticated beverage landscape extends well beyond the main dining room. At The Library & Bar and the adjacent Madera Bar, Menlo Park’s most sophisticated gathering places, the indoor and outdoor settings offer the perfect venue for informal, constructive dialogue or post-negotiation decompression. The wood-and-lacquer design features low, warm lighting and comfortable lounge seating that spills out onto an expansive terrace overlooking the Santa Cruz Mountains.

The ultimate strength of this resort lies in the staff’s alignment with the demanding, high stakes world of their guests and their rare, empathetic ability to orchestrate an environment of absolute tranquility amidst that pressure.

A Calabrian Table: Built by Memory, Belonging and Family

Originally from Scalea, a coastal town in Calabria, Italy, Francesco arrived in California in his early twenties carrying family memory, regional cooking, and a desire to make his family proud.

During the past years, he has developed a restaurant with a telluric understanding of Southern Italian cuisine, formed across generations. An instinct grounded in raw sincerity, a fierce regional identity, and a life lived in harmony with the community around him.

San Carlos responded immediately.

Building an independent restaurant whilst raising a young family within the pace of Silicon Valley life requires persistence beyond the dining room. Through long hours and steady focus on his craft, Francesco established something firmly rooted within the local landscape and fabric of the community.

Music also formed an important part of his early life. After graduating from a respected conservatory in Italy, he continued advanced studies in America as a trombonist under mentorship connected to the Juilliard School. That artistic background remains visible in Delizie today, in the atmosphere of the restaurant itself, where pacing, movement, and human connection unfold with natural ease.

From the earliest days Francesco approached his work with seriousness and dedication. He searched carefully for producers, fishmongers, markets and importers whose standards aligned with his own.

Overtime, Francesco built a dedicated team around him, many of whom became familiar faces returning to guests. Their professionalism, warmth and coordination helped define the essence of the restaurant as much as the kitchen itself. Service moves naturally with coherence, creating a room where guests settle in easily.

His sourcing reflects a long respect for sustainability, seasonality, and responsible relationships with producers. Ingredients are chosen not only for quality, but for origin and the people behind them.

Delizie became known for its Calabrian identity, shaped by coastline, mountains, olive groves, citrus, seafood, handmade pasta, and slow cooking rooted in regional memory.

Family remains central throughout.

Francesco often speaks of his grandmother as a lasting inspiration. Her influence is present not only in recipes, but in the familiarity that runs through the table.

Later, his sister joined him and introduced traditional desserts and pastries that became part of the restaurant’s identity. Together, the siblings’ architectural blueprints align, expressed layer by layer through food, wine, desserts, and service.

I met Francesco during the restaurant’s infancy, standing as one of his very first guests. With the passage of time every member of my family visiting from abroad has found their way to his table. When my in-laws arrived , Francesco welcomed them instantly as “Mom” & “Dad,” a tender gesture mirroring his innate warmth and hospitality.

On certain evenings he has been known to gladly reopen his kitchen just to comfort a returning guest craving a familiar dish. At times, he personally returns to markets after receiving a last-minutes reservation to prepare something specific. New recipes inspired by Calabria often appear as tasting plates shared directly with guests.

Food here is never static. It moves with memory, season, and conversation.

Wine holds equal importance within the house. Italian selections span Calabria, Campania, Tuscany, Sardinia, and Piedmonte alongside Californian wines from Napa, Sonoma, and Paso Robles. Francesco approaches wine though origin and balance, encouraging discovery at the table.

Neighborhood teams gather around during matches and celebrations. On some occasions, I hosted team-building gatherings for my Stanford colleagues. Francesco was always at ease welcoming these groups, bringing humor, ease and creating a natural connection around the table.

During the pandemic years, this sense of gathering became even more meaningful.

Like many independent restaurants, Delizie faced an uncertain period during Covid. Francesco remained closely present with his community. When indoor dining paused, he created an outdoor terrace so guests could continue to gather whenever possible.

At time of distance disruption, Delizie offered people a place to return to.

Musica In Terrazza

One evening stands out when Francesco brought musicians together and performed with his band outside on the terrace whilst guests gathered under the open sky. The moment carried a rare sense of ease and connection during a difficult period.

Alongside this, he supported community food efforts, contributing to kitchens providing meals during hardship. His work extended beyond the restaurant itself.

That spirit continues to define Delizie.

After fourteen years in the Bay Area, Francesco now prepares to return to Calabria with his family, revisiting the landscapes, traditions, and producers that continue to inform his cooking and imagination. This next chapter is not a departure from Delizie, but rather part of a continuing journey toward new ideas and future concepts.

San Carlos will miss Francesco and Delizie during this period away, yet there is equal anticipation for what he will bring back. New inspiration, direction, and stories drawn from the places that formed him.

We look forward to this return with genuine excitement for what comes next.

In Elviria, Marbella, this convergence takes form at Subtil, where food, wine and hospitality move with assurance and complete conviction. It is shaped across borders and seasons, informed by Belgium, refined through Switzerland, and softened by Spain. What emerges is a personal geography expressed through sourcing, atmosphere and the culture surrounding the table.

All in the Name

Subtil carries its meaning in its name. In French, subtil suggests nuance, sensitivity, and timely held perception. It is subtlety as refinement through detail, where excess gives way to balance and coherence.

Provenance sits at the center of the house, shaping choices from growers and winemakers to product, sourcing and service.

The space reflects its maker with assurance. Nothing competes for attention. Each element belongs because it has been selected with understanding.

Hospitality is not performed, it is maintained. Guests are received with ease, and time is allowed to extend naturally across the table. Nothing feels hurried, yet everything moves with fluency.

At the center stands Gaetan. His expertise is not presented as instruction, but as ease. Food and wine are approached through instinct, memory, and long practice. Guests feel guided through confidence and familiarity.

This confidence is grounded in a lifelong relationship with food and wine. Formed between Belgium, Switzerland and Spain, his approach carries structure, generosity, and continuity. The offering reflects this balance.

The Subtil Philosophy

The table reveals this philosophy in detail.

Fine de Claire oysters arrive with measured freshness and a lift of Madagascar pepper. Tuna Tartare is composed with tenderness. Dry-aged Beef Carpaccio, matured for 180 days, carries depth rooted in time rather than embellishment.

Artisanal sourdough is served with calm olive oil, its simplicity defined by quality. Warm Cashews and Sweet Walnuts appear as grounding elements, placed with purpose.

A Cava named Passion opens with fresh citrus, orchard fruit, and delicate minerality carried through a dry finish. A structured Verdejo follows, earthy and mineral with gentle texture.

Correcaminos Rosé introduces brightness and freshness alongside the depth of the carpaccio.

Each wine deepens the character of the dish and extends the dialogue of the plate.

Unfolding Terroirs

Low-intervention natural wines in Spain reflect a return to smaller-scale farming and restrained cellar handling, allowing grape, soil, climate, and harvest to remain fully visible in the glass. Many are produced organically with native yeast and little filtration, which explains the slightly cloudy appearance found in some bottles. This natural sediment is not considered a fault, but a part of a more direct expression of the wine itself.

Unlike heavily standardized commercial wines, natural wines often shift subtly from vintage to vintage, shaped by weather and harvest conditions. Many are drawn to them not as a trend, but for their transparency, lower use of additives, and closer connection to agriculture and seasonality.

Their freshness, acidity, and mineral structure also make them particularly well suited to cooking, where wines with cleaner profiles can bring depth and balance to sauces, reductions, and slow preparations. At their best, these wines offer texture, vitality, and a stronger sense of origin.

I was invited into the glass-enclosed, temperature-controlled front -of-the-house wine cellar, where a geography of growers, winemakers, families, and soils unfold through each bottle. The selection is visible, deliberate, and central to the atmosphere of the dining room itself. A statement of provenance and continuity.

Natural wines from the foundation of the cellar, selected for character, vitality, and the people behind them. The collection evolves through memory and conversation. Guests are remembered, preferences recorded and future selections informed through continuity.

Service around the wine remains assured. Guests are guided with fluency and given space to explore at their own space naturally.

Behind this lies a network of producers and vendors whose imprint is essential. They form an unseen structure that supports the environment. Their work is not background detail; it is part of the foundation.

A Story of Continuity

This continuity extends throughout the day.

Breakfast and brunch sit within the same philosophy. Viennoiseries arrive fresh, followed by house-made preparations, cold-pressed juices, specialty coffees, and selected teas. The focus remains consistent, clean ingredients, honest preparation, precise execution.

Brunch leans towards vegetables and seasonality. Everything appears because it belongs.

Calibration is evident in the details. Glassware marked for accuracy. Portions measured with consistency. Repetition strengthens the passage.

The team moves together with composed choreography; each gesture naturally connected to the next.

A covered outdoor terrace extends the dining space, offering seating designed for favorable weather, defined by a contemporary palette of light tones and a sense of easy comfort.

The experience continues with a classic Tart Tatin. Warm caramelized apple, delicate pastry, and balanced sweetness bring the table to a composed close.

The team works in a shared fluency, each movement aligned and fluid. Always mindful of guest service indoors and outdoors.

Subtil stands apart through knowledge shared with assurance and a complete understanding of product, wine, and hospitality. Each element moves naturally into the next.

A lasting impression is rarely created by one detail alone, but rather by how everything comes together over the course of an evening.

In Silicon Valley’s core, Nobu Palo Alto offers a serene West Coast sanctuary of minimalist Zen garden tranquility. Bound by masterfully executed Japanese Peruvian culinary artistry, remaining the ultimate global venue for milestone family celebrations.

It was with this desire for shared joy that we looked westward to Marbella’s opulent coastal enclave. This season with family over, we celebrated a special birthday at Nobu Marbella, immersing ourselves in its glamorous Mediterranean energy, late-night terrace vibes, vibrant plaza beats and illuminated Japanese maples.

Returning to Nobu Marbella is not about discovery. It is about recognition.

The encounter begins before the first course reaches the table. A welcome is delivered with ease rather than performance. The room operates with flawless precision. Nothing competes for attention, and because of that, every detail becomes noticeable.

There is confidence in a restaurant that understands its identity completely. Not a place chasing novelty for the sake of relevance, but one committed to refinement. Nobu does not seek to surprise at every turn. Its strength lies in its consistency, in the discipline of maintaining a standard night after night.

That consistency becomes visible in small ways. The pacing of service. The calm flow between courses. The attentiveness that never crosses into intrusion. Hospitality here is not loud. It exists in observation, in timing, in knowing when to approach and when to step back.

The menu, familiar to many, carries a different meaning when revisited. Certain dishes arrive almost as rituals rather than selections. Yellowtail, balanced with precision and restraint. Black Cod, carrying richness without heaviness. The flavors are recognizable, but recognition itself becomes part of the pleasure.

What stands out is not excess, but control.

The wine follows the same philosophy. Considered rather than showy. Each glass supporting the table without overpowering it. There is elegance in restraint, and Nobu understands that deeply. Nothing feels overexplained or overrepresented. The sensation is allowed to unfold naturally.

Then there are the moments impossible to place on a menu.

The pinnacle of the evening arrived at dessert, when Executive Chef Yannick Lohou and his team personally greeted us at the table. Posing for pictures, we shared Nobu’s signature ‘point-and-thumbs-up’ gesture. A playful tradition started by Chef Nobu Matsuhisa to signal that the guest is always ‘number one.’

Capturing that moment with Chef Yannick’s team proved that across continents, the true Nobu benchmark is measured by the joy the people gathered around the table.

Chef Yannick stepping out to greet our table brought a different dimension to the evening. Not ceremonial, not performative, simply present. A gesture that carried warmth without disrupting the atmosphere of the room. In restaurants operating at this level, genuine presence matters. It reminds guests that hospitality, at its best, still remains personal.

What makes evenings memorable is rarely one dramatic moment. More often, it is the accumulation of thoughtful decisions.

Even dessert carried that feeling. No birthday cake presented for spectacle. Instead, a dessert chosen with intention. Refined, composed, and suited to the evening itself rather than expectation. It felt more elegant that way. More aligned with the spirit of the experience. Nothing excessive. Nothing unnecessary.

That is what lingers most at Nobu. The understanding refinement is often found in what is held back.

Many restaurants attempt to create impact through constant reinvention. New concepts, presentations, and reasons to remain relevant. Yet there is something increasingly rare about a place that chooses instead to perfect its own language.

Nobu understands the voice of familiarity. Not familiarity that becomes predictable, but familiarity that becomes trusted.

To return is to realize that the true measure of hospitality is not whether a place can impress once. It is whether it can maintain the same level of care over time. Whether it can continue to make guests feel considered without appearing calculated.

There is reassurance in entering a room that knows exactly what it wants to be. Reassurance in service that feels composed, in dishes that arrive with consistency rather than reinvention. Over time, that reliability becomes its own form of luxury.

And perhaps that is the reason people continue to return. Not searching for something unfamiliar but hoping to find the same standard waiting for them once again.

First opened in 1969 under the vision of Conrad Hilton, the hotel became part of Marbella’s golden era, a destination associated with refinement, discretion, and an emerging international allure.

Set within expansive tropical gardens that extend toward the shoreline, the property has long held a singular position. As one of the early pioneers of the beach club culture in Marbella, it helped define a way of living that continues to shape the region today. That heritage remains intact, now expressed through a more contemporary perspective.

There are spaces that do not stand still, but evolve as part of a longer and larger story. And that is certainly true of Don Carlos Resort.

The recent restoration introduces a refined architectural language guided by interior designer Jaime Beriestain. His approach draws out the character of the property through proportion, materiality, and flow. Interiors feel composed and assured, where texture and light interact with balance, allowing each space to unfold with purpose.

As we arrive, we are received by Restaurant Manager Jacobo Moyano, part of the hotel’s management team, whose presence immediately establishes a sense of ease.

The transition into the hotel feels immediate. The lobby opens with elegance, anchored by Our Sherry Bar that reflects both place and tradition. Here, the ritual of aperitif is given its proper setting, rooted in knowledge and precision.

Beyond, terraces extend outward, offering uninterrupted views across the gardens toward the sea. The relationship between interior and landscape remains constant, allowing the Mediterranean to shape the experience from every vantage point.

Dining becomes a central expression of this evolving identity.

At Los Naranjos, the culinary direction reflects an elevated interpretation of Andalusian cuisine, where tradition is preserved, refined and extended.

Under the leadership of renowned Executive Chef Fran Zafra Collado, the menu draws from regional foundations while introducing a contemporary perspective defined by technique and expression. His trajectory through leading kitchens has informed a style that balances familiarity with progression, allowing the cuisine to feel both rooted and current.

Joined by family visiting from St. Maarten, the evening takes on a shared dimension, their enjoyment immediate and unmistakable, adding together another layer to the occasion.

As the evening unfolds, we move through a sequence of dishes that reflect both place and season.

Each course is accompanied by a thoughtful selection of Spanish wines and cava, offering a perspective on the country’s rich viticultural landscape. The pairings are guided with the expertise, allowing each wine to complement the dish while revealing its own structure and character.

Service stands as one of the defining strengths of the offering. Under the direction of General Manager Jorge Manzur, hospitality at its most accomplished, where attention is both intuitive and exact.

Dietary considerations are not simply accommodated but anticipated, and each guest at the table is engaged with equal awareness. The sommelier guides with confidence and ease, offering interpretation, translation, and tastings that deepen the expression without excess. Every gesture from pouring to pacing, reflects a level of mastery that elevates the entire evening.

Elsewhere within the property, a different approach to dining is expressed at Oasis Kitchen. Conceived around wellbeing, the concept centers on a philosophy described as ‘earth to plate’. Here, the focus shifts toward nourishment and balance, where ingredients and preparation align with a broader sense of equilibrium.

On a future visit, we look forward to exploring this offering further, from the Açaí Bowl to the Pitahaya Bowl and other signature creations, each designed to support both body and mind.

The Don Carlos Spa introduces another dimension to the setting. Rooted in an Andalusian sensibility, the wellness offering is expressed through ritual and environment, where the Hydrotherapy Circuit forms a central element. Water, temperature, and space are orchestrated with precision, creating a sequence that restores and recalibrates.

Throughout the property, there is a sense of cohesion. Architecture, design, gastronomy, and service align, each reinforcing the other with consistency.

What defines Don Carlos Marbella today is not a singular gesture of change, but the way in which it carries its past forward with purpose. History, design and hospitality converge without tension, creating an experience that feels both grounded and forward-looking.

Time spent here does not fade quickly. It settles, defined by shared moments, by attention that feels considered, and by a setting that holds its presence long after departure.

It remains compelling in a way that invites return.

Above the Pétrusse Valley, where the city opens into a green expanse shaped by water and centuries of transformation, an estate rests with calm assurance, Villa Pétrusse.

The property does not assert itself. It settles into its surroundings as though it has always belonged there, held between the landscape and the city that rises beside it.

As we arrive, Camille Mauny, Front Office Manager, offers a first welcome that is poised and unforced, setting a tone that feels immediately aligned with the house. From there, we are guided by Head Butler, David, through the property, revealing its layered architecture and the measured transitions between spaces.

Once known as Villa Baldauff, the residence has long held a position of prominence above the valley. Built in 1880 atop the ancient casemates of the former fortress, its foundations are anchored in a much older narrative. For nearly thirty years, the villa remained unoccupied, its structure preserved, its purpose suspended.

What has emerged is not reinvention, but a considered return.

The villa originally built by architect, Pierre Kemp, and restoration, guided by designer Tristan Auer, preserves the defining elements that give the house its identity. Monumental fireplaces remain as focal points, stained glass moderates the passage of light, and a concealed underground passage reconnects the villa to a pavilion beyond. Each intervention reflects discipline, allowing the building’s architectural integrity to remain fully legible.

Inside, the atmosphere is composed yet expressive. Materials are layered with restraint, allowing each room to hold its own identity without disrupting the continuity of the whole. Among these spaces, a Renaissance salon stands apart, its scale defined by expansive mirrors and frescoed surfaces that evoke a period of heightened craftsmanship, now held within a contemporary context.

The architecture frames its relationship with the landscape, maintaining a constant dialogue with the Pétrusse Valley beyond.

Below, the structure descends into historic casemates, where the original stonework has been reinterpreted as a wine cellar. Here natural conditions provide an ideal environment for the preservation of exceptional bottles. Guests are invited to experience curated tastings led by the head sommelier, where knowledge is conveyed with precision and depth.

A further dimension of the house is found within its wellness offering. Guided by Susanne Kaufmann’s Alpine philosophy, the spa experience is shaped through purity of approach, where materials, treatments, and environment align to create a sense of restoration that feels intrinsic to the house itself.

Villa Pétrusse is a member of Relais & Château, a collection defined by properties where heritage and hospitality are held in esteemed balance, and where individuality is preserved rather than standardized.

The General Manager, Stéphanie Raimbault, brings a composed and assured presence to the property. Her international experience is evident in the consistency she establishes, ensuring each element of service echoes a focus on the art of the essential.

In the kitchen, direction is led by Executive Chef Kim de Dood, a Luxembourg-born chef, whose path reflects both mastery and breadth. Trained at École d’ Hôtellerie et de tourism du Luxembourg, his early formation took him through Michelin-recognized kitchens in Europe, including Becker’s in Trier and The Waterside Inn, where classic technique was refined with rigor.

His trajectory then extended into Asia. At Saint Pierre, he rose to head chef at a notably early stage, later earning two Michelin stars. His work continued in Kuala Lumpur and at the Luxembourg Pavilion during Expo 2020 Dubai, where he represented his country’s culinary identity on an international platform.

Returning to Luxembourg, his approach reflects both origin and expansion. At Restaurant Le Lys, he presents a cuisine grounded in Luxembourgish tradition while incorporating a broader understanding of flavor shaped by his years abroad. Classical references are revisited and reinterpreted with structure and precision, allowing them to evolve without losing their foundation.

His cooking is measured and deliberate, drawing connections between taste and memory and establishing a relationship with the guest that extends beyond the plate.

Dinner in the Brasserie Ciel brings this philosophy into focus. We enjoyed shareable plates, tasting a variety of dishes with our friends.

Thoughtful recommendations to the very last bite, inclusive of outstanding quality wine selection, expertly curated pairings, both diverse and extensive, allowing for reasonable discoveries, was simply sublime.

Throughout our stay, the human presence of the team remains consistent. Aliana, a young member of the service team, brings warmth and sincerity to each interaction, her natural ease contributing to the atmosphere of the house.

In the early hours of departure, Olivier at the front desk ensures a seamless transition, his attentiveness reflecting the same level of consideration present throughout the experience.

Across all moments, there is a sense of coherence. Architecture, design, cuisine, and service exist in synchronicity.

Above the valley, the hotel does not distance itself from its history. It exists within it, shaped by centuries beneath its foundations and by a long period of stillness that has strengthened its immanence.

What has been realized here is not simply restoration, but continuity.

Time spent here lingers. Shared moments around the table, conversations carried into the evening, and a sense of place that remains long after departure.

This boutique hotel, with twenty-two rooms and suites, and bespoke gardens to feast upon, is without question, somewhere to return to again and again.

Think of cooking like a musical composition. Recipes are like a piece of music, and the cook is the conductor of an orchestra of ingredients.

There come moments when following a recipe is no longer about instructions (i.e., reading the notes on a musical score), but about how your style or form takes shape in practice.

This is true whether the recipe was created by Gordon Ramsay or your grandmother!

What sits in a composition is not always immediately understood. Ingredients can be clear, yet their role in the recipe does not always register at first glance. Recognition and comprehension are not the same thing.

It’s when they come together through practice and interpretation that true “music” is made.

Reading the Same Composition Differently

While reviewing preparation notes with my team ahead of lunch service, I sensed something wasn’t quite right. On paper, the composition was straightforward. Yet as my team moved through it together, it became clear that each person was interpreting the recipe slightly differently.

One focused on speed, preparing every element in advance, assuming the dish was about assembly rather than timing.

Another prioritized presentation, thinking first about plating order without fully considering temperature and sequence.

A third followed the method exactly as written, but without adjusting for volume, which would have affected consistency during service.

We all tend to gravitate towards the thing(s) we know well.

Here’s the point: nothing was incorrect in isolation, they just weren’t aligned. So we stopped. Not to correct the dish, but to align on how it was being interpreted.

From Following to Interpreting

That difference is not small. It alters what is seen and what is missed.

Following a recipe begins well before we read it. It begins in the state of mind we bring to it, whether alert, distracted, open or fixed. It continues in how uncertainty is handled: What requires immediate interpretation? What needs to be revisited? What does not work well?

Some compositions are not built for immediacy. They only reveal themselves when given distance and repetition.

There is discipline in not rushing toward closure when we cook. In allowing instructions to remain partially formed rather than forcing early conclusions. In resisting the urge to move on or to simplify too quickly.

Interpreting a recipe becomes recognition of method. This happens over time and has little to do about what is written on the page.

This is why I had included my procurement team and vendors in these planning sessions, to learn, and to better align before preparing a new dish. This way, we could gain consistency, knowledge, and a shared vision for the composition.

The team was present not only in execution, but in interpretation. Over time, this exposure shaped how they approached preparation itself.

Shaping the Composition

Finding (or rediscovering) your form in the kitchen requires practice. Just like an orchestra will rehearse again and again. It’s no different whether you are a home cook or professional chef.

Rehearsal is not simply getting the recipe “just right”. Practice generates a style of cooking. One that hones your mindset, techniques, and ultimately your own interpretation of the recipe.

Take bread as an example. For some, baking can seem intimidating. However, bread baking builds consistency.

It depends on time, repetition, and care in maintaining the starter. Each step carries weight, and nothing can be rushed without affecting the result.

Recipe: Artisan Sourdough Bread (a.k.a., Hearth Bread)

Served with Farmers Market Harvest, a distinctive contrast of earthy greens Artichokes, Fava Beans, Asparagus, English Peas, Radishes, Sorrel, Peppery Spring Mix.

Jewel-toned fruit such as Apricots, Blood Oranges, Grapefruit, Cherries, Peppery Spring Mix, Rhubarb and the first sweet surge of Berri and Cherries.

In France: Pain au Levian. In Italy: Pane di Altamura. In Germany/Austria: Sauerteigbrot. In Denmark: Rugbrød. In Spain: Masa Madre.

Powered by fermentation, perfected by time, the artisan craft, boule reveals bread in its most honest geometry.

Ingredients: 100g active sourdough starter, 1.5 cups warm water, 4 cups all-purpose flour, 1 tbs. fine sea salt

Tools: Large Bowl, Spatula, Damp Cloth, Floured Basket, Sharp Knife, Dutch Oven with Lid,

Method: In a large bowl use the spatula to mix in water and starter. Mix by hand until a rough dough forms.

Cover with the damp cloth and allow to rest for 20 minutes.

Over the next 2 hours gently stretch the dough and fold it over itself. Do this 4 times per session, resting in between.

Repeat this process 4 times total during the 2-hour period.

Bulk Fermentation: Cover the bow with damp cloth. Leave at room temperature for 6-10 hours, until the dough rises by about 50% and looks bubbly and airy.

Turn the dough into a clean surface. Gently fold the edges into the center to build tension.

Flip it over and shape it into a smooth round ball.

Cold Proof: Place the dough into a floured banneton basket lined with a floured towel. Cover and refrigerate for 12-15 hours. This slow fermentation develops flavour and tang.

Bake: Preheat oven to 250C (480F), place a Dutch Oven inside (a heavy, thick-walled pot with a tight-fitting lid, usually made from cast iron.) It helps trap steam released from the dough, rise higher, and yields a crisp golden crust.

There is a natural eagerness that arises when we step into the kitchen. We want to begin, to move, to create. Yet this eagerness can lead us forward before we have fully understood what is required.

A recipe may appear straightforward, a list of ingredients familiar, and the process assumed. It is often in this assumption that mistakes take shape.

From the type of food being prepped to the level of cleanliness, every kitchen needs standards. A baseline for how it “operates”, whether in the home or in a professional setting.

Reading with Intention

A recipe is not simply a sequence of steps. It is a structure that guides timing, balance, and outcome. When read carefully, it offers clarity. When rushed, it leaves room for error.

To read with intention is to pause and take in the full picture. Understanding before action allows the cook to move with purpose rather than hesitation.

I was reminded of this when I hired three young men in my kitchen. There was energy and enthusiasm, and I believed their presence would strengthen the kitchen.

Instead, a different dynamic emerged. Each one wanted to prove himself, to move faster, to demonstrate capability without first grounding himself in the fundamentals.

In their effort to perform, attention began to slip. Recipes were skimmed rather than understood. Measurements became estimates. Labels were not checked with the care required ain a professional kitchen.

These were not deliberate choices, but the result of moving ahead without full comprehension.

Creating & Maintaining a Standard

Just before a compliance inspection, I noticed what had been missed. Labelling was incorrect. Processes had not been followed precisely. These were not minor oversights. They carried real consequences, both for those we served and for the integrity of the kitchen itself.

I remember speaking with my sous chef, Oscar, in that moment. He had been moving quickly, trying to keep everything running, yet had overlooked the importance of stepping back to read and verify.

We stood together and viewed each detail, not as a correction alone, but as a reminder of what the role truly required. It was not only about producing dishes, but about protecting the standard behind them.

He understood from that point forward, his approach changed. He became more deliberate, attentive, and aware of the responsibility carried in every decision made in the kitchen.

I had to address it directly. They were held accountable, not to discourage them, but to reinforce the responsibility that goes with preparing food.

In hospitality, there is no space for assumption. Every ingredient, every label, every step matters. The standards we uphold are not for appearance. They exist to protect and to serve. In other words, upholding the standards.

That moment marked a change. They slowed down. They began to read each recipe fully before starting. Labels were checked with care. Ingredients were handles with greater awareness.

Their confidence grew, not through speed, but through understanding.

Ingredients Tell A Story

This lesson extends into every kitchen, especially to the home kitchen. Reading a recipe from beginning to end before starting creates a sense of readiness. It allows each step to follow naturally, reducing uncertainty and building confidence.

Reading labels carries equal importance. Ingredients tell a story. They reveal what has been added, what has been preserved, and what may not be necessary.

To read them is to make informed choices. It is a way of protecting those we cook for, especially children, elders, and those with specific needs.

Returning to the kitchen means more than just learning to cook. It is to rediscover a way of caring (a standard of care) that is thoughtful and deliberate. When we understand what we prepare, we take responsibility for what we serve.

Cooking then becomes more than a task. It becomes a practice of attention and respect. It connects us to those we feed and reminds us that every meal carries meaning beyond the plate.

Quenelles of Goat Cheese on Figs

This recipe teaches us the essence of balance, freshness, and clarity in ingredients.

Ingredients:

• 6 Large Fresh Figs, halved lengthwise (high fiber content, rich in minerals, antioxidant powerhouse, energy booster)

• 6 Quenelles (a term taken from the French cuisine referring to a mixture of cream shaped into a soft football) of Soft Goat Cheese

Tools: Bowl, tablespoons, knife cutting board

Method: Place warm or fresh figs on plates, top with a quenelle of cheese, sprinkle with pistachios and drizzle with honey.

Shape quenelles by using two warm tablespoons to form an oval shape from the mascarpone mixture.

I often return to that moment, just before the inspection, when small oversights revealed something greater. It was not only about labels or process, but about responsibility.

Those young men left with a clearer understanding. In hospitality, care is found in the details, and nothing is too small to matter.
