Traveling during what is commonly referred to as the “Shoulder Season” (April-May and September-October) can lead to unforgettable memories when thoughtfully planned. Such was the case during our recent stay at the One&Only Royal Mirage in Dubai, where the resort blends the legends of ancient Arabia with the striking backdrop of the Dubai Marina skyline, harmoniously merging tradition with modernity.
We were warned by our frequent-flying friends that it would be swelteringly hot during this time. However, upon landing, we were seamlessly whisked away to our destination, without breaking a sweat. Our smooth ride was complemented by engaging conversations with our friendly driver, setting the tone for a delightful stay.
The guest services team greeted us with great warmth and a hand-on-the-heart welcome (a genuine show of welcoming hospitality).
The resort is arranged in three distinct regions: The Palace, which flaunts grandeur, The Arabian Court deftly manifests dramatic architecture of the Orient, The Residence unveils an exclusive hideaway, where luxury meets comfort.
An Oasis
We were welcomed in our suite in The Residence, a pristine sanctuary of comfort and elegance. As the terrace doors swung open, the view that unfolded before me took my breath away. It revealed a garden paradise- acres of meticulously landscaped blooms, graceful topiaries, butterflies, and a variety of stunning native birds in a chorus of chirping and tweeting. Honeybees fitted about the herb garden, filling the air with the scents of mint, coriander, and thyme. Cascading water features, fountains, ponds and streams added to the serene ambience. The lush, hydrated grounds formed a picturesque picnic space exhibiting nature in all its glory.
I spent my mornings savoring coffee and enjoying my walks amidst the flora and fauna in the garden of my dreams, discovering winding pathways flanked by Bougainvillea and fragrant frangipani trees. Shaded areas are thoughtfully arranged throughout the resort, providing white gazebos and other inviting spaces for rest and contemplation.
A Visionary Behind Exquisite Dining
I had the honor of meeting Chef Carmine Pecoraro, Directory of Culinary. We settled into the Library Lounge, which radiates a warm grace, surrounded by timeless vintage books that beckon repose and reflection.
I felt truly spoiled when Chef took the time to share his story with me. He did so with such ease and enthusiasm, allowing me to fully absorb everything he shared.
Hailing from South Africa Chef Carmine began his journey at the Michelin-starred Waldo’s restaurant in Berkshire, UK., and Scotland’s esteemed Balmoral Hotel. His impressive portfolio includes prestigious establishments such as Burj al Arab Jumeirah, Emirates Palace, JW Marriott Marquis in Dubai, and Hilton’s Conrad in the UAE capital.
Chef Carmine successfully led the groundbreaking Fresh-On-Table campaign, as well as making significant strides to improve the diversity of the hotel kitchens by hiring and training numerous women in the culinary field.
His expertise has earned him numerous awards and accolades, as well as the opportunity to serve Hollywood celebrities and prepare meals for royals.
Over his twenty-four years of experience in the luxury hotel industry spanning the UK and Middle East, he has managed over a hundred chefs and a dozen outlets.
Chef Carmine’s culinary ethos emphasizes that, ‘attention to detail and personalized service has always been the key,” he believes that each venue uses the power of food to tell a story. Chef’s passion for Italian cuisine is beautifully intertwined with his South African roots. He loves cooking with fire and smoke, on the grill and over coals, particularly enjoying working with fish.
His ambition is to serve serving only the finest products to his guests. His many stories recount the time he acquired a kilogram of Beluga caviar from Harrod’s at 2:30 in the morning for a distinguished guest!
We had the luxury of meeting many staff members in each service area of The Residence, which fostered a memorable closeness to the place. One highlight was when Chef personally escorted us through his kitchen, providing a fascinating demo and including his entire team for a warm meet-and-greet.
Epicurean Flavors
Celebrities and Beach Bar & Grill by Argentinian born, Michelin-starred Chef Mauro Colagreco, celebrated for his innovative approach to cuisine that blends the flavors of his native Argentina with the rich culinary traditions of France.
Colagreco trained under renowned chefs, including Alain Passard at L’Arpege in Paris, before establishing his own restaurant Mirazur, on the French Riviera. In 2019 Mirazur was ranked number one on World’s Best Restaurants list and awarded three Michelin stars.
Chef Carmine, the gallant host, met us at the Beach Bar & Grill, to introduce us to Ajay and Ram, the restaurant team who were equally hospitable.
The restaurant embodies a welcoming vibe that beautifully marries the alfresco style of Argentina with the charm of coastal dining. The centerpiece of the room is the open fire encased grill, showcasing the cooking process, drawing diners in with its crackling flames and enticing aromas.
The menu is a celebration of South American flavors, featuring the finest seafood and prime cuts of meat, expertly prepared to highlight their natural richness. Vibrant flourished of herbs bring authenticity to every bite. A delightful journey through the culinary landscape of Argentina.
On another evening, Chef met us at Eauzone and connected us with Manager Kash from South Africa.
The venue combines classic techniques with Asian flavors. Glittering lanterns flicker to life, reflecting in the dining room mirrors and the surrounding turquoise pools. The par excellence service is led by Kash and his team, who are not only the funnest lot but engage in great conversations. A lively energy that is unrivalled. vibe, characterized by its youthful energy and cheerful atmosphere.
Ultimate Hospitality
As anyone who has followed me would attest, I am passionate about hospitality as a way of living - a lifestyle! So, I would be remiss if I didn’t address the wonderful hospitality received during our stay at the Royal Mirage.

Janko Bulatovic F&B Marketing Manager, generously spent time with me, expertly navigating the intricate details of the hotel’s design, architecture, history, art and overall concept. His passion and dedication to his work were truly evident.
We focused on the artwork ‘Working Dhow’ by Yiull Damaso, which embodies Dubai’s maritime heritage, with its depiction of a traditional fishing boat and pearl divers in the Arabian Gulf. This piece honors the resilience of those who shaped the city’s history. I appreciated its strategic placement in The Dining Room, enhancing the unique ambiance of the space.
These intimate interactions not only enriched our visit but also showcased the passion and dedication of the talented individuals behind the scenes.
We need to return to explore the remaining dining spots we missed this time, such as Tagine, serving traditional Moroccan cuisine; Olives offering Mediterranean dishes; Samovar Lounge, known for its afternoon special teas; and The Rotisserie, which specializes in international cuisine and live stations.
The shoulder season, typically occurring from April to May and again from September to October, offers unique advantages for travelers seeking an enriching getaway.
With fewer crowds, more relaxed surroundings, increased attention from staff, and better rates on accommodations and activities, it’s the perfect time to explore destinations at a leisurely pace and connect with the local culture overall.
Regardless of the time of year one might visit Dubai, there is no question that the One&Only Royal Mirage should be their go-to destination. I cannot wait to return!
