Afternoon tea, a quintessentially charming British tradition that emerged in the early nineteenth century, began to cross borders and find its ways to France, especially as it gained popularity in England.
French society embraced the ritual, adapting it to their own culinary heritage. And before long, they had curated an amalgamation of customs and practices that continue to be celebrated today.
In essence, high tea is a cross-channel, cultural fusion from London to Paris. One that influenced my own ‘take’ on afternoon teas, whether in Hong Kong, San Francisco or Luxembourg.
A Gift that Keeps on Giving

Tasting Opulence
At the Royal Champagne Hotel & Spa, afternoon tea transcends mere custom; it becomes an art form, meticulously curated by a team of dedicated staff whose knowledge shines as brightly as the crystal chandeliers overhead. Each member of the team is a connoisseur, weaving tales of tea origins and steeping techniques, their voices rich with passion and expertise.
As we settled into the stylishly appointed room we took in the elegant lounge below and the stunning view outside. The atmosphere hummed with anticipation. The appreciation of heritage, thoughtful design and scrupulous attention to detail in the artistic offerings were striking.
Each pastry reflected the brilliance of the featured artists, making the occasion both a visual and culinary ecstasy.
An orchestra of distinctive tastes unfolded with the surprisingly enticing notes of Madagascar Vanilla & Fleur de Sel, harmonizing beautifully with the zesty & nutty essence of lemon & black sesame. Sweet & spiced apples add a palatable richness, while the velvety, caramelized allure of Dulce de leche envelops the palate in a luscious embrace. Nuances of smoky cherries and sugared almonds reveals the quintessence of tonka beans. Crispy hazelnuts, renowned for their essential character of complementing chocolate, toffee and caramel, leaves a lasting sense of fulfillment.
To elevate this impression even further, a champagne toast is introduced, its effervescence cutting through the richness, while subtle hints of citrus and notes of fresh almonds and fruit, long finish with creamy mid palate. Every sip and bite, is a harmony that lingers in the memory long after the last note fades away.
The impeccable service at Royal Champagne Hotel is not just about what is served; it’s about the connection forged through shared moments, making every visit a jubilee of refinement and grace.
An Elusion of Scones
Amidst the delectation, the absence of iconic scones with clotted cream was keenly felt. These scones, imbued in memory and tradition, evoke warmth and connection, particularly during the holidays, reminding us of the rich heritage of communal gatherings they represent.
Perhaps even served on the plates and potter of Picasso, Leach, or Matisse?
I possess a strong affection for scones and many fond recollections. Good food produces good memories.
Inaugural Sips
My inaugural afternoon tea took place at The Peninsula Hotel in Hong Kong, a venue established in history and immersed in culture since 1929. Growing up in this British colony, I reveled in the rich English culinary ancestry, that enriched my formative years.
I remember tasting my first warm scone with jam and clotted cream at The Pen. At that time, I lacked the etiquette and sophistication to know whether the cream should be spread on before the jam or vice versa!
Looking back on that moment now, I realize it was more than just a treat; It was an introduction to the elegance of the event. The sweet and savory flavors, the fresh lasting aromas of the teas that linger, the sweet fragrance, floral and fruity notes, sophistication of the venue and hospitable service made a lasting impression on me, sparking a passion for the art of tea and the joy of sharing these moments with others.
I have certainly met many acquaintances and friends over afternoon tea across the world, each encounter enriching my appreciation for this beloved practice.
One of my most treasured memories was meeting a well-loved celebrity at The Dorchester in London during the tea service with my daughters. I can still hear my daughters’ squeals of excitement and disbelief when they met her! (It was Barbra Streisand.)
Petite Scones
Some years later after many tastes in tea pots, both in London and Paris, I was inspired to develop a lighter version of that delicious scone, capturing its essence while making it a bit healthier. I proudly served this scrumptious treat, sharing the pleasure of the ceremonious event with colleagues, and friends and evoking memories of those early episodes.
Making clotted cream was a challenge in our kitchen. So, I opted to order this from our very responsible vendors. We offered our petite scones, a distinctive product, in a remarkable setting, exclusively for our valued patrons.
Best of all, the scones were soft, flaky, crumbly, and chewy!
Clotted cream originated approximately 2000 years ago. However, both the English towns of Devon & Cornwall lay their its claim to the title of the original clotted cream. The efficacy of clotted cream to maintain its firm texture allows it to be served alongside scones and other breads without changing consistency or breaking.
Scones themselves first appeared in Scotland in the sixteenth century.
An Evolution of Tradition
Afternoon tea has long been a cherished ritual in British culture, evolving through the centuries to reflect changing social customs and tastes. Some of the globally renowned hotels have played pivotal roles in this transformation.
The Langham Hotel, is often credited with originating the tradition1865, inspired by the social gatherings of the aristocracy. It became a place where the upper class could enjoy a leisurely time with friends, making the beginning of a beloved custom.
The Peninsula Hotel in Hong Kong further popularized the ritual in the 20th century, showcasing a blend of Eastern and Western influences. Its elegant tea service, featuring a variety of pastries and delicate crustless finger sandwiches, became a hallmark of luxury. Notable events, such as royal visits and celebrity gatherings, have cemented its status as a must-visit destination for gourmand enthusiasts.
The Dorchester has also embraced this time-honored tradition, hosted numerous high-profile events and served as a gathering place for society’s elite. The hotel’s tea service has been a favorite among celebrities and dignitaries, enhancing its reputation as a symbol of sophistication.
Lady Carnarvon, wife of the 5th Earl of Carnarvon, played a significant role in popularizing afternoon tea during the early 20th century. Her lavish gatherings drew the social elite, making afternoon tea a fashionable event and embedding it deeper into British culture.
Through the unique contributions and the events hosted, these hotels have not only preserved the tradition of afternoon tea but also enriched it, ensuring its continued relevance and appeal.
