While we embrace the new changes brought by vegan, vegetarian and plant-based diets, I reflect on my own journey within a large family where dietary restrictions and varying palates were a cherished part of our traditions. We welcomed the opportunity to prepare a new dish that offered aroma, flavor, vibrancy of color and was purposefully created with the intent to warm the heart of the recipient.
Growing up and working in hospitality, I have long understood global cuisine and the art of curating meals to cater to the unique needs of each individual.
Tapestry of Tradition
Whether in Hong Kong, San Francisco, Memphis or Luxembourg, our Thanksgiving table has always been a welcoming space for new friends and family members. We have embraced the opportunity to incorporate dishes from different countries alongside the traditional turkey each year, on thanksgiving there has been a visitor, a new friend, a family member from afar, gracing us at our table.
However, it has been a while since I last cooked a turkey, and it seems unlikely to happen again in the near future. That’s why this Thanksgiving, let’s come together and celebrate with a plant-based feast that resonates with every soul gathered around the table.

In recent years there has been a notable increase in the number of individuals embracing plant-based diets and incorporating sustainability into their food choices. This shift can be attributed to several compelling reasons, as people become more cognizant of the pressing need to address climate change and seek ways to make a positive impact through their dietary decisions.
Plant-based diets have emerged as a more sustainable option, requiring fewer resources, and generating fewer greenhouse gas emissions.
Beyond their environmental benefits, plant-based diets offer a wealth of health advantages. Abundant in fiber, vitamins, and minerals, these diets are typically lower in saturated fat and cholesterol. Research indicates that these foods may help mitigate the risk of chronic ailments.
