What you're calling confidence and restraint is mostly standardization. The yellowtail tastes the same in Marbella as it does in Hong Kong because someone wrote down the exact cut, portion, and sourcing, then trained a line to repeat it every night. Even the chef coming over for the thumbs-up photo is a written service step. The impressive part is holding that across continents while the staff keeps changing.
