The yellowtail tastes the same in Marbella as it does in Hong Kong because someone wrote down the exact cut, portion, and sourcing, then trained a line to repeat it every night. Even the chef coming over for the thumbs-up photo is a written service step. The impressive part is holding that across continents while the staff keeps changing.
